The Wine

This wine list is rooted in place. Across different grapes, regions, and styles, these wines share a common discipline: they use technique to keep place visible and freshness intact. Each bottle is distinct, but they all carry a clear sense of origin.

Bisson Vino Frizzante Glera 2025 — Valdobbiadene, Veneto, Italy From the steep hills of Valdobbiadene, this is Glera made in a drier, more restrained style than most people expect from the category. Bottled as frizzante under crown cap, it keeps a fine, gentle texture and a clear line of green apple, white flowers, and mineral freshness. It shows how much precision can exist in a wine that still feels light on its feet.

Fattoria La Rivolta “Vigneti di Bruma” Falanghina — Campania, Italy Grown on hillside limestone and clay soils in the shadow of Mount Taburno, this Falanghina is rooted in one of Campania’s most established growing areas. Fermentation and aging in stainless steel preserve the wine’s brightness and shape, bringing citrus, pear, and a clean mineral edge into focus. It is both ancient in origin and precise in execution.

Lewis Wines Viognier / Chenin Blanc 2024 — Texas Hill Country & High Plains This blend draws on two Texas growing areas to build a wine that is aromatic, structured, and composed. Viognier brings floral lift and stone fruit, while Chenin Blanc provides the acidity and form that keep the wine moving with clarity; stainless steel fermentation and aging preserve that balance. It is a thoughtful expression of Texas fruit, shaped by decisions that seek definition rather than imitation.

G.D. Vajra Claré J.C. Langhe Nebbiolo 2024 — Piedmont, Italy This is an intentionally earlier, brighter expression of Nebbiolo, made to emphasize freshness, perfume, and immediacy. Whole clusters and light carbonic maceration contribute red fruit, rose, spice, and a lively, lightly buoyant feel, while the structure remains recognizably Nebbiolo. Served with a light chill, it shows how technique can preserve energy without losing structure.

Duc des Nauves 2023 — Famille Amoreau, Vin de France (Bordeaux) Farmed by the Amoreau family on the same astéries limestone mother rock that defines Château Le Puy, this wine is made with the same natural, organic, and biodynamic approach. Indigenous yeast fermentation, aging in small cement vats, and bottling without filtration allow the wine’s dark fruit, earth, freshness, and velvety tannin to emerge naturally. It carries a sense of place through continuity, balance, and restraint.
